I ran a couple errands today. I left the house and the sky looked pretty scary to the northwest but it will still sunny at my house and warm. My car said it was 77*. HOT for October as far as I'm concerned!! So, I literally went down the street and turned the corner to get to the vet's office (so I could pick up $190 of meds for my poor crazy pooch). I was inside 5 minutes and the temp dropped about 5*. So then, I hopped back in the car and drove through the dry cleaners and McDonald's. .... mmmmm ... Mickey D's ... mmmmmmm oh - right - sorry - By the time I got home, the temperature had gone from 77* (according to my car) to 62*!! It is soooooooo nice outside. I am wondering where the rain is. They promised rain. I turned off the sprinklers in anticipation of storms. When will I learn?
So ... now that it's cold outside, I want more spicy food! HEY - 61* is cold for us, right now!!! Wonder what I have to cook tonight? James said we're eating too much Mexican food lately, thanks to my enchiladas last night. Oh, they actually turned out pretty good. The recipe needs a little tweaking but it was easy and didn't poison us so I think we'll keep it around. I don't know what a sour cream chicken enchilada is supposed to taste like but I'm pretty sure what I made last night was far from what you would get at a restaurant. It was easy enough a great way to use up some leftover chicken. Here's the link, if it works. http://allrecipes.com/Recipe/Chicken-Enchiladas-V/Detail.aspx
BTW - it's 58* outside now so I think I need to close the window!! brrrrrrrrrrrrrrrrr! SO HAPPY we finally have FALL weather!!

YAY for fall weather! :-D Glad it finally came your way! We have another few weeks of temps in the 50*s and then the temperature will really drop here. I can't believe winter is just around the corner!
Glad the enchiladas turned out good! Mexican food sounds great, we'll have to get some soon!
AMEN! I have been waiting for this cooler weather! I love it! I prefer it cool and dry, but we don't often get that in Dallas. Guess I'll take what I can get. That was a crazy weather day though, just watching/feeling it cooler and each breeze blew in sronger!
