Yum-O and super easy! Here's how I did it. Packaged Cheese Ravioli (like Buitoni - but I used the store brand 5-cheese type and it was fine). Boil per package directions - maybe a little less time than recommended. Layer in a casserole dish ... sauce, noodles, shredded mozzarella cheese (or whatever kind you like best), repeat layers until gone and top with lots of cheese (I like cheese - you can skip the in between layers if you want)!! I baked it for 10-15 minutes at 400*. Remember you're only melting cheese and heating it through so it doesn't take too long. I used my homemade spaghetti sauce so just use your favorite sauce. I think one family size package of ravioli and one large jar of sauce should be enough. I used two family size packages of ravioli and about 45-50 oz. of sauce and it was way too much for two people -- we had about two thirds leftover. James said it took him a few bites before he realized it was ravioli instead of layers of lasagna noodles and ricotta cheese, etc.
I had a second interview with the same company this morning and it went well. I'm waiting to hear from them -- they said they'd call me today. I'm ready to get back to work so I hope it all works out. They're supposedly running a background check on me - maybe I came back with multiple felonies or something! HA HA HA!
It rained today!! There was some actual thunder and lightening too. If you live in North Texas you understand why this is worth noting on my blog. I was upset I had to drive to my interview in the rain but I wasn't about to complain because we really need it!!
